Potato Salad with Prosciutto (serves 4)
500g potatoes, halves and cooked
4 slices of prosciutto, fried until crisp and broken
1 onion finely chopped
½ cup roasted capsicum
¼ cup capers
½ cup chopped parsley
1 tbs chopped mint
½ cup mayonnaise
½ cup sour cream
2 tsp balsamic vinegar
Salt and pepper to taste
Mix together the mayo, sour cream, vinegar and salt and pepper. Toss with all the remaining ingredients.
