Cucumber and Apricot Salsa
This salsa is great for garnishing fillets of fish, grilled, roasted, barbecued or steamed.
1 Cucumber – diced to 1 cm pieces
2 Apricots – flesh diced to 1 cm pieces
½ small Red onion – diced fine
¼ bunch Basil leaves – torn
1 Lemon – juiced
2 tbsp Extra Virgin Olive Oil
Salt and Pepper
Combine all ingredients in a mixing bowl.
