Zucchini and Lemon Muffins
Makes 12 medium/80g muffins
2.5 cups Plain flour
1 cup Caster sugar
2 ½ tsp Baking powder
1 Medium zucchini – quartered lengthwise then chopped
1 Lemon – zest grated and juiced
300 ml Milk
3 Eggs
1 tsp Vanilla extract
80 g Unsalted butter – melted
1 pinch Ground nutmeg
Melted butter for lining the muffin holes
